I have started baking more that I finally have an oven! Last week I made oatmeal, carrot muffins and we enjoyed them so much I made another batch this week!
I also found a carrot, date muffin recipe that I hope to try soon! Someone gave us a big bag of dates a while back and I have not made anything with dates before! Should be fun to try some new things out!
Here are the recipes! Enjoy!
OATMEAL CARROT MUFFINS
(recipe from Cooks.com)
1/2 c. oil
3/4 c. brown sugar
1 egg
1 tsp. vanilla
1/2 c. grated carrots
1/2 c. whole wheat flour
1/2 c. flour
1 c. rolled oats
1 tsp. baking powder
3/4 tsp. soda
1/4 tsp. cinnamon
1/4 tsp. nutmeg
Nuts, as desired
Combine oil, brown sugar, egg, vanilla and carrots. Mix well. In another bowl, combine dry ingredients. Stir into first mixture. Add nuts. Spoon batter into muffin papers in muffin tins. Bake in 400 degree oven for 15-20 minutes. Makes 12 muffins.
CARROT - DATE MUFFINS

1 c. oatmeal
1 c. flour
1/2 c. walnuts
1/2 c. brown sugar
1 tbsp. baking powder
1 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1 c. carrots, shredded
1/2 c. milk
1/2 c. dates, chopped
1/2 c. vegetable oil
1 egg
1 tsp. vanilla
Heat oven to 425 degrees. Grease muffin tins. Combine oats, flour, walnuts, brown sugar, baking powder, cinnamon, soda and salt. Add combined remaining ingredients, stirring until moistened. Fill muffin cups. Bake 18 to 20 minutes.
