I love menu planning! This makes my ninth menu since I started linky up with Organize Junkie! having the menu helps me plan my days better, get stuff made and done ahead of time and I am not stuck 30 min. before a meal wondering what to fix!
I am sooo looking forward to fresh veggies and salads! Hope to get some seeds going soon in my planter pots! Figuring we may have some late frost and a lot of rain this spring, but need to get the soil ready (compost, etc.) and some cold weather foods started!
I would love to hear from others who make their own yogurt and pita bread! I have a Yolife yogurt maker now and want to try some pita bread for sandwiches too! So if anyone makes pita bread and yogurt, hope you will share your tips and recipes or links! Thanks sooo much!
Last week husband decided he wanted some chili, so chili replaced the soup last week and we are having soup this week! We did not go to the grocery store, so did not make tacos.=( Hope to do that this week!
Made muffins and rolls last week in the wood cook stove! So thankful I have an oven now! And have a lot of rolls put back in the freezer! The muffins were good and I need to make more! I forget what a great breakfast and snack or dessert they make! =)
Here is my menu for this week!
Monday:
breakfast= biscuits and eggs
Lunch= leftovers (a mashed potato casserole)
Supper= beans and cornbread
Tuesday:
breakfast= muffins and cold cereal
Lunch= leftovers beans and cornbread
Supper= soup (homecanned pork and veggies)
Wednesday:
breakfast= muffins and fruit
Lunch= soup (homecanned pork and veggies)
Supper= cabbage, pork and rice
Thursday:
breakfast= cold cereal and fruit
Lunch= more soup(!)
Supper= salmon patties
Friday:
breakfast= yogurt (hopefully)
Lunch= leftovers (salmon patties)
Supper= Soup (again! Can you tell my bunch loves it? and I am so glad they do!)
Saturday:
breakfast= pancakes and sausage
Lunch= tacos
Supper= marinated chicken, w/rice and veggies
Sunday:
breakfast= leftover pancakes and fruit
Lunch=(leftovers) marinated chicken, rice and veggies
Supper= tacos

ReplyDeleteChicken pita pizza:
1 whole-wheat pita
1/4 c. low-fat pizza sauce
1 portion cooked chicken breast - sliced
1/4 red bell pepper, sliced
1/4 yellow bell pepper, sliced
1/4 small zucchini, sliced
1/4 c. reduced-fat mozzarella cheese, shredded
Preheat oven to 425 degrees. Place the pita on a baking sheet. Spoon pizza sauce evenly over the pita. Top with the sliced cooked chicken, bell peppers, zucchini and mozzarella cheese. Bake for about 10 to 12 minutes or until the cheese is melted and the pizza is heated through. Slice, serve and enjoy :)
