Last Week's Recipes!

Okay, first a very yummy cassarole! Princess A. enjoyed this too! Soo chessy!

Cheese Potato Scallop
8 medium potatos (I used 3 qts. of my home canned potatos!)
1/4 c. butter
3/4 c. chopped onion (I just put about a tablespoon full of onion powder for my bunch)
1/4 c. flour
1 1/4 tsp. salt
2 tsp. dry mustard (I didn't have this so left it out!)
2 tsp. worcestershire sauce
3 c. milk
8 oz. (2 cups) chedder chesse, shredded
1/2 c. saltine cracker crumbs
2 Tblsp. melted butter
paprika

I drained my potatos, poured them into a 2-9x13" cassarole dish, or you would cook potatos in boiling water til tender. Drain well.
Melt 1/4 cup butter in large saucepan. Add onion; saute till tender (or add onion powder). Blend in flour, salt , dry mustard, and worcestershire sauce. Gradually stir in milk. Cook stirring constantly til sauce thikens and boil 1 min. Remove from heat and add cheese and stir til cheese is melted. Pour cheese over potatos. Sprinkle with cracker crumbs combined with butter. Top with paprika. Bake at 350 for 30 min. or until golden brown.
If you wish to use raw, sliced potatos, bake for 1 hour at 350.

I made these (a double batch though) twice in the past few weeks! Sooo Yummy! King Ed requested them! I found some chocolate fudge icing that I enjoyed on mine!
