~What's Cooking Wednesdays~ Tex-Mex Corn Dish

Being a native Texan, I love Tex-Mex and Mexican food! YUM!
If you are looking for an easy, cheap, fast, Tex-Mex side dish, you should Love this! It is my favorite corn dish (so far =))!

A Tex-Mex Corn Dish

1 10.oz can of Rotel
2 Tbsp. butter
1 8.oz package of cream cheese
2/3 cup milk
3/4 tsp salt
1/4 tsp. pepper
1 package (16 oz.) frozen corn, thawed (or I use 1 qt. of home-canned corn!)

In a 3 qt. saucepan add butter and Rotel. When butter is melted add cream cheese, milk, salt and butter. Cook and stir over low heat until cheese is melted, then add corn and heat through.

That simple!
I love this dish with our Thanksgiving and Christmas meals!

~Music Mondays~ "Nothing Without You"

Music Monday! Yippee! Yesterday, I played some A cappella songs from Youtube and it was so refreshing! I look forward to hearing all the songs linked up over on Shawntele's blog, "Saved By Grace" today!

I knew days ago which song I wanted to share today. I have been going over millions of things in my head the past few days, since i have decided to take off on a home business (see post below)! I keep telling myself that no matter what, I am going to give God the glory and praise His Name! Whether the business goes good, really good, or not good at all! I am putting it all in His hands and look forward to where His paths lead me!

How this song speaks to my heart and puts words and music to my jumbled prayers!

Dear Heavenly Father, Help me to be humble. Help me to give you all the praise and glory and help me to never be proud and haughty! Give me a meek and gentle spirit so that when people see me, they see You and not me. Help me to be respectful of others and to show You the reverence You are so deserving of. And when people complement me, help me to be brave and use that as an opportunity to share about You. In Christ Precious Name, Amen.

~Menu Plan Monday~ Using What You Have


Well, once again my menus have overlapped because of an abundance of leftovers! =) I am I the only mom who uses leftovers like three of four times? I just tend to cook a huge pot of soup or beans or whatever and it just seems to last a long time with our small family! Oh well! It sure cuts our grocery bill down! I have not been to the grocery store since before Christmas! And when husband goes it is just to get eggs, milk, bread, butter, cheese and Maybe a couple of other things!
We try to keep a lot of food stocked up all the time though. We have home canned meat and veggies that we canned last year! And we stay stocked up on other canned foods and beans and rice! =) I love having a full pantry and cannot imagine having to go to the grocery store every week to restock!
Here is my "tentative" menu for this week! chances are there will be a lot of leftovers though!

Mon.
breakfast= oatmeal
lunch = chicken and rice and sauteed mushrooms
supper= pinto beans
Tues.
breakfast= scrambled eggs, sausage & toast
lunch = leftover chicken & rice
supper= pinto beans
Wed.
breakfast= sausage & cheese omelets
lunch = spaghetti
supper= white beans
Thurs.
breakfast= cold cereal (if we have milk! if not oatmeal)
lunch = spaghetti
supper= white beans
Fri.
breakfast= pancakes
lunch= beef & veggie soup (from home canned food)
supper= white beans
Sat.
breakfast= pancakes
lunch= grill cheese sandwiches
supper= leftover beef & veggie soup
Sun.
breakfast= oatmeal or cold cereal
lunch= turkey sandwiches
supper= leftover beef & veggie soup

~Spiritual Sundays~ "Take Time to Be Holy"

Hello Spiritual Sunday!
I have been MIA for Way to long now! I have really missed you!
I decided to join today and pray that you all have been doing well.
I see that Spiritual Sundays blog has a lot more followers and a lot more wonderful blogs joining/linking up! PTL! I look forward to visiting some new blogs!
This year I want to spend more time focusing on a quiet time each day and i am really enjoying the daily Bible reading plan that I started last July! PTL! I have been sticking to it (thanks to accountability help from the great ladies at the "Conservative Homeschooler"!), and for my birthday present, my dear King, husband bought me a MacArthur study Bible! I also found a great planner that is a devotional planner, all-in-one so I am really excited about how well it has all fell together! God is soo GOOD! Praise His Holy Name!
I wanted to share a song today that has been going over and over in my head this morning! "Take Time to be Holy"! "‘You shall be holy, for I the LORD your God am holy." Leviticus 19:2
God calls us to be Holy, as He is Holy! What a high calling! We must put off the old man and put on the new man. We must cleanse ourselves and rebuke evil and do not tread the paths of evil!
We have been reading Proverbs on Sunday mornings, for our home church and leaning about the foolish woman vs. wisdom. Again and again Solomon warns against the paths that lead to foolishness and in the end, Death!! The paths of wisdom lead to life and many days! What a strong message, and one that we should take to heart every day and moment of our lives.

Suddenly! I am a Work-At -Home Mom! Wow!

Since Wed. night, this past week, a lot of things have changed for me! It is truly amazing and I am just praying for God's help and guidance through it all.
A large door has opened for us and I pray that I can use it to help others and help my household and environment at the same time. It is Very exciting! Not to mention that it will help our fiances out greatly!
I wanted to start sharing it with everyone who reads my blog and maybe have you join me on the journey ! Lol! I will be pretty busy the next 2 months trying to get a good, solid standing in this home business, but I will do my best to keep posting on my blog (and maybe start a blog for my job journey!! =) Never know)!
I told King Ed and a good friend that it just seems like a God-thing, the way it is all working out. I have been more scheduled this year, with more spare time, lining my days out better, and some other things that will help me with a home business.

As I mentioned, I will be sharing more about the new business over the next few months (and hope some of you will join me!), but I just have to tell you about the company, what I like about it, some about the products, etc. now!
The Company is Melaleuca! "The Wellness Company"!
I will be helping others become preferred customers so they can benefit from the wonderful, health, body, cleaning, etc. products!!! And for anyone who wants the opportunity to work from home, selling health products and helping others start their own home business!
The more I learn about the Melaleuca products the more I love them!
They are environmentally friendly, safe for your home and you save money by switching to their products!
As a mom, I would love to have safer cleaning and health products for my family! And the idea of a product that is better for the environment is great! Less in trash to haul off/recycle and less in the landfills!
I can give face-to-face presentations, or online/over the phone presentations!
We live on a fixed income and will probably not have it for very many more years, so this should really help us out financially. I have high goals for what I hope to achieve with this company, but I will be joyful even if I only reach half my goal!
Another big plus, as you have probably noticed by now, is how easy it is for stay-at-home moms and homeschoolers to do!
What a great opportunity! I can sell products that I will use everyday and Love! And that are not harmful to my children, pets, clothing, home and items I use them on! Plus they last longer, I use less of them and stay healthier and cleaner at the same time! And by using these better products, I have less empty bottle which means I throw away less and buy less! Fantastic!
Plus I can take care of my family's aches and pains, colds and coughs, and make sure they get the vitamins they need with all the great health and wellness products!

~What's Cooking Wednesdays~ Baked Potato Soup?

I have found some new blogs to follow from last Follow Friday and Mom Bloggers Club, and one of them has some new, neat memes(?)! I thought it would be great to join Jess @ "It's All About Savings" for her "What's Cooking Wednesdays"! She is sharing healthy, time saving and cost saving recipes and hopes others will share too!
I may not have a recipe I have tried every week, chances are they will be ones I have done in the past or want to try! =) But I look forward to having a new recipe to share on my blog every week! Hope you will join in on the fun!


Yesterday I made some potato soup from a recipe from some friends, but as usual I "tweaked" it up a bit and and made this:


(Could be called) "Baked Potatoe Soup"
2 quarts of home canned potatoes (peeled and chopped) with water (I am guessing it would be 6 medium size potatoes)
1 stick of butter
1/4 c. minced onion
1/2 tsp. salt
about 1 c. Velveeta cheese
2 c. milk
5 tbsp. flour
In a large cooking pan, bring potatoes, water, onions and butter to a boil. When potatoes are soft, add cheese and salt. When cheese is melted, add the flour and milk mixture. Cook till soup is preferred thickness.
Serve topped with bacon, sour cream and shredded cheddar cheese.

"If Mama Ain't.." Best Planner/Devotional Ever!!!!

I found one of the most exciting things today over on Mom Bloggers Club!
It is a planner! Not just any planner though! I have looked at a lot of planners over the past year and none of them seem to be everything I want, plus they cost an arm and leg and I just cannot do that for something I will have to get new every year! But this one Will work!!!! YIPPEE! You really have to check it out!


I think I like every feature on it! This planner is for busy moms who want to plan there days and months AND have their devotional, all in one! With spaces for weekly goals, daily menus, memory verses, daily Bible reading, and motivation!
This planner makes you reflect, start new every month and helps you grow not only as a better planner, but spiritually too!

My 2nd Menu Plan Monday!


I just loved having a menu plan last week! I think it really helped me out a lot! I was not having to figure out in my head what we could have that day or the next! We even had more leftovers over the week, so we ate those up over the weekend. So, I did not follow my plan to a T, but it just worked out so well! I look forward to it this week and the weeks ahead! I did not get to visit very many of the other great blogs that linked up at Organizing Junkie last week, so I hope I have more time to do it this week! If you are linked up to Organizing Junkie, leave me a comment and I will try to visit your menu plan this week!

Here is the plan I hope to work with this week!

Mon.
breakfast=cold cereal
dinner = turkey sandwiches
supper= chili

Tues.
breakfast= oatmeal and raisins
dinner = potato soup
supper= leftover chili

Wed.
breakfast= pancakes
dinner = leftover potato soup
supper= chili dogs

Thurs.
breakfast= pancakes
dinner = spaghetti (made with spaghetti squash)
supper= pinto beans

Fri.
breakfast= eggs and toast
dinner= spaghetti (made with spaghetti squash)
supper= pinto beans

Sat.
breakfast=cold cereal or oatmeal
dinner= we may go to a friends party! If not, then probably chicken and rice
supper= pinto beans (topped with sour cream, salsa & cheese!)

Sun.
breakfast= omelets
dinner= chicken and rice
supper= white beans and cornbread

"The 5000 Year Leap" 5th Principle

Here is my thoughts as I read the 5th Principle in "The 5000 Year Leap". I have been sharing these on a discussion at the "Conservative Homeschooler" and here on my blog. I highly recommend this book to everyone! You really need to learn this stuff about our country's history and please teach it to your children!

5th Principle (Pages 94-101)
"All Things Were Created by God, Therefore Upon Him All Mankind are Equally Dependent, and to Him They are Equally Responsible."
The 5th Principle is very easy to grasp, as a firm believer in the Creator.
"The Reality of a Divine Creator"
I love John Locke’s definition of an atheist here! "Out of touch with reality"! How true. Once again, if you are close to nature and reality, you cannot deny that there is a God and Creator of All!
I need to make a note to myself to look up this book by John Locke, "Essay Concerning Human Understanding"!
"How Can We Know There is A God?"
Now that our children are getting bigger, we have to do more explaining around here! It is good to teach children since it really makes you think about what you believe and dig deeper into everything! You often have to ask yourself why you believe a certain way. It is just good!
In our daughter’s last school books, we discussed God and the creation, so we have been reading a lot about creation. She also got a telescope (but we have not been able to get out and use it yet!). Learning about planets, one of the books brought up the reason planets are spheres. It is interesting. You know if there was no Creator, then the planets could be any shape and there would be no perfect motion in outer space! Everything would be one big jumble and jam, like some Si.Fi. show!

"Getting to Know God"
Genesis 1:26 "‘Let Us make man in Our image, according to Our likeness.’" What do you know about God? He has compassion and love. He has justice, a sense of humor, is the Ultimate Artist and Chef and designer! He has order.

"Concerning God’s Revealed Law Distinguishing Right from Wrong"
This makes so much sense to me! And it scares me that we have gotten so Far away from the law of nature! I know this country deserves whatever the Lord throws down, or allows to happen to it! And yet I fear for my family and friends and all the innocent ones who still do not know "their right hand from their left" (if I may quote from the Bible!).

"The Nearness of God"
Having grown up in a Christian home, I can hardly imagine not thinking that God is all around us! All knowing and All seeing! But sadly this was true then and is still true now! How sad and lonely it must be to think that no one is there for you All the time!

"George Washington"
If you have the book "The Real George Washington" you can read and see how close this man was to His Creator! He is truly amazing to read about and his faith is inspiring!

"James Madison"
I do not know as much (have not read as much, but need to read more!) about Madison, but it can clearly be seen by the Constitution and his many writings, how close he was to his Creator also!
"In God We Trust"
"In God We Trust", taking an oath, swearing and affirming before God. Of course these were not just thrown in there! These were so important! People took it very serious to stand and say they swore to tell the truth, because they had a healthy fear of the Lord!

The 4th Principle From The 5000 Year Leap


Now that I am on a "reading plan" this new year (!), I have gotten back to reading "The 5000 Year Leap" and doing my own study on it! I just love this book and if you have not bought it yet, you Really Need to! And if you do have it, but have not read it, please do! It is so important that you know what is in this book!

I have been posting my thoughts on "The 5000 Year Leap" on a book study group at the "Conservative Homeschooler" and this was my over view from last Saturday!

4th Principle (Pages 75-93)
"Without Religion the Government of a Free People Cannot be Maintained."
The founders' knew that they needed religion to structure their government back then and they also knew the importance of teaching it to future generations. If it was not taught and passed on the government would no longer have that firm structure and the society would fail. Of course we can see that now! We focus on many subjects of "knowledge" in school nowadays, but we leave out the other 2 subjects: Faith and Morality!
"Washington Describes the Founders' Position"
To quote Washington, "It is substantially true that virtue or morality is a necessary spring of popular government."
"The Teaching of Religion in Schools Restricted to Universal Fundamentals"
Wow. So you mean that you could not teach creeds? Or things "inconsistent with the tenets of any religious sect or denomination"? Wow. The more you read the founding fathers and how they founded this country the more you understand why the socialist are having to fundamentally reform America! There is just NO WAY they could abide by any of it! Must be why they do not read it either!
"Franklin Describes the Five Fundamentals of 'All Sound Religion'."
Franklin's creed is really amazing! Especially if you have been taught that he was an atheist! Lol! I will not get off on that though, this creed needs to be taught to our children as part of our homeschool lessons!
"The 'Fundamental Points' to Be taught in the Schools"
Could you imagine if someone tried to teach these fundamental points in a public school room today!?? And yet this is what the founders said should be taught in all schools!
"Statements of the Founders Concerning These Principles"
What a completely different mindset they had back then! I keep finding myself thinking, "I wished I lived in that country"! Pitiful. I Do live in that country! What use to be that country anyways. We have got to get back to that. It is so sad we have wondered so far away from God. =( Makes me feel like this country is the children of Israel!
"Alexis de Tocqueville Discovers the Importance of Religion in America"
Once again, I wish I could go back in time! What do people think when they come to visit America now? It is sure not what de Tocqueville found on his trip back then. God help us!
"European Philosophers Turned Out to Be Wrong"
De Tocqueville learned that what was taught in Europe was not true, after he visited the new America.
"A New Kind of Religious Vitality Emerges In America"
De Tocqueville saw for himself that this came from moral teachings and not political pressure.
"De Tocqueville Describes the Role of Religion in Schools"
He called it a "phenomenon" for a person to be ignorant of the faith, history and Constitution of his country.
"De Tocqueville Describes the Role of the American Clergy"
Interesting. The clergy where not into politics. They taught the religions and morals, but "they filled no public appointments"!
"The Clergy Fueled the Flame of Freedom Stressed Morality, and Alerted the Citizenry to Dangerous Trends"
America I believe has ceased to be good and therefore she is no longer great! We have to bring God back into our Churches, schools and homes, before we can ever be a great country again. De Tocqueville said he found America's greatness when he walked into her churches. But now most of our churches have become lukewarm or cold and satan and the socialist have filled them with their lies and misleading.
"The Founders' campaign for Equality of All Religions"
This is interesting.....I would have to do more research about this. Being the Christian that I am and seeing the problems in our country today, I would have to say, that I agree for the equality of Christian denominations, but not All religions.
"Why the Founders' Wanted the Federal Government Excluded from All Problems Relating to Religion and Churches"
This has gotten so misspoken and twisted and over ruled, that it is turned all around now. We now have constant oppressing and persecution from the government as Christians!
"Justice Story Describes the Founders' Solution"
Left to the state!
The wisdom and the understanding and foresight of our founders is just amazing!
"Jefferson and Madison Emphasize the Intent of the Founders"
"The First Amendment was designed to eliminate forever the interference of the federal government in any religious matters within the various states." What has happened? Wow. This has me really upset. Do we follow anything in the Constitution anymore? or have we thrown it all out?
"The Supreme Court as Well as Congress Excluded from Jurisdiction over Religion"
Not only was the federal government excluded by the First Amendment but also the Supreme Court and Congress.
"The Federal 'Wall' Between Church and State"
This just goes to show how they have taken Jefferson's letter and used his words, to make laws for themselves. As it points out, if you read the actual letter and Jefferson's writings in their historical context, you cannot get out of it, what the Supreme court has now. But they have said it long enough to make people believe it to have different meaning.If you notice, this happens a lot. Keep saying something and people will believe it.
"Religious Problems Must Be Solved Within the Various States"
It was in the power of the individual states, to settle the varies differences of faiths and have "equal rights among all".
"Affirmative Programs to Encourage All Religions on the State Level"
Jefferson gives a perfect example here about the "equal rights among all", and at the same time shows a very different setting then we have today! Could you imagine four churches of different denominations meeting in the local courthouse for their services every week?!
"Religious Principles Undergrid Good Government"
"Without religion the government of a free people cannot be maintained." If we just live by the five truths that they founded our country and government on, that come from the Bible and were the creed of Franklin and learned by the founders from their studies and faiths, we cannot go wrong!
Reading this chapter, I can see over and over that once again, we cannot have a great country without God. The sooner we all get back to our Bibles and our knees and get to reading the Bible to our children the sooner this country will return to God!
It starts in each of our homes. It has to start here, at home.

~Music Monday~ Only Truth

Truth.
"Pilate said to Him, "What is truth?"" John 17:38
Many wonder what truth is. Many seek and find. Many seek but do not like what they find, or want to much of what the world has to offer, then to fully cling to and live by the truth. Truth, to me, is black and white though. You either know the truth or you do not. But then again most things are black and white to me. I do not like the gray!
I love the book of the Gospel of John. I love how he writes of Jesus, "full of grace and truth" (John 1:14), that law was given thru Moses, but grace and truth came thru Jesus (John 1:17)!
"Jesus said to him, "I am the way, the truth, and the life. No one comes to the Father except through Me." John 14:6
Truth. Over and over. Maybe that is why this song, by an amazing Acapella group, has always been one of my favorites!

My First "Menu Plan Monday!


I am not sure what my main reason for joining Menu Plan Mondays is Yet! But I am hoping to learn how to plan better, try out some new recipes and how I can feed my family better meals!
Anyways, I am sure people can tell from my menu plan this week that I am still a young momma with little children, and still learning as I go! =) But here goes!

Mon.

supper= salmon w/ leftover white beans

Sat.
breakfast= oatmeal and raisins
dinner= pork and rice
supper= chili dogs

Sun.
breakfast= cold cereal
dinner= leftover pork and rice
supper= leftover chili

For my beef/vegetable soup, I am using my home canned meat and veggies!
I have homemade rolls in the freezer to add to meals.
And I hope to make some granola for breakfast cereal!
I love making everything from scratch. I plan to make the chili on Sat. And I always soak my beans the night before I cook a new pot! As you can tell we eat a lot of beans in the winter. Husband is a beans, meat and potatoes man! =)

Any hints, recipes to share, etc. would be fun to hear!

Bowflex and Book Reading!

I know I have not been very personal on here lately! That is due to staying busy with homeschool and trying to spend Less time on the computer! Wow! That is hard to do! =(
I hope you all had a Happy New Year and are enjoying all the snow and cold weather! =) We finally got a tiny bit of snow today. The girls are wanting enough to make snowmen and I am hoping for enough that we get to make donuts (a family tradition- make donuts when it snows! See this post Here from last winter for my recipe!!).

I am not one to make new year resolutions usually, but this year, we have a have a Bow Flex Home Gym that has been just sitting in our living room and has only been used maybe a dozen times since we got it several months ago! So I have started one of the work out plans doing 9 different work outs, for 20 mins., three days a week (Mon., Wed., Fri.). I have done it three days and hope to do my fourth tomorrow! Yippee! I am pretty excited about it! I really hope I can stick to it and wonder how long before I get the Bow Flex body? Lol! Actually, I hope it helps me strengthen my back more then anything.

I am also wanting to commit more time to reading this year! I have some good books that I have started and have more I Really want to read, so I have started a "reading schedule"! I was looking for a monthly schedule layout for reading, but could not find one, so I am using THIS schedule for now. I am writing in the days and month and then have six books picked out to read, one a day for six days (Mon.-Sat.), leaving my Sundays open for extra Bible/devotional reading!


The books I have to start with are "Created to Be his Helpmeet" by Debi Pearl (to read on Mon.), Lies Homeschool Moms Believe" by Todd Wilson (for Tues.), "The Joyful Homeschooler" by Mary Hood (for Wed.), "The Mom I want to be" by T. Suzanne Eller (for Thurs.), "A Woman's high Calling" by Elizabeth George (for Fri.), and "The 5000 Year Leap" by W. Cleon Skousen.
As I finish each book, I hope to replace it with a new one! Maybe I will be able to add more books to my shelf this year! That would be great!

We finally have our "Real George Washington" book back!!! Yipppeee! I want to start reading it as a family together now! With the cold evenings, it should be fun to cuddle up and read about Washington out fighting for our freedom in the freezing weather! Wow. He went thru so much and yet was so humble about it. I wish I was more like him. So selfless. *sigh*
I should have more George Washington quotes when we get to reading it too! =)
