~Menu Plan Monday~ Welcome Summer Time!!!

Summer is here! Yippee! Time to work, sweat, play in the water, take more baths and showers, weed and water the garden, and look forward to all those fresh summer recipes! YUM! I am sure you can find tons of great summer recipes, plus hundreds of blogs to surf and great menu plans at Organize Junkie!!

Here is what I hope to cook this week!

Breakfasts :
will be egg burritos, pancakes & cold cereal!

Lunches:
will be sandwiches (tuna and peanut butter & jelly) and leftover buffets!

Supper
Mon.=catfish & mussels w/white beans and hushpuppies.
Tues.= BBQ Ribs, crock-pot backed beans
Wed.= hamburgers
Thurs.=chicken (not sure yet whether it will be fried, grilled or slow cooked!)
Fri.=zucchini crust pizza
Sat.= chunky taco soup or enchiladas (if I have the ingredients!)
Sun.= shepherds pie

~Menu Plan Monday~ Cooking from the Pantry and Freezer!

I hope everyone has a wonderful Memorial weekend!
It is Finally starting to feel like June is almost here! Yippee! We got the kiddie pool and water sprinkler toys out yesterday! It was great fun and everyone is looking forward to it again today!
The garden is coming up good now too! Praise the Lord! I hope we can have fresh lettuce and radishes, etc. out of it in a few weeks!

~Menu Plan Monday~ May17th-23rd


I have really missed my menu plan the past two weeks! Aaaaaaa!! I was back to trying out what to cook each day! What a pain! Well, this week, back to the plan! =) If you have not visited Organize Junkie yet, or started a weekly or monthly menu plan, I HIGHLY recommend it! =) There are tons of blogs to visit, ideas, recipes to try, etc!
The only bad thing about menu plan Monday is that I do not seem to have enough time to visit the other blogs linked up!

Yesterday I made Mexi Shells for lunch and homemade tortillas (for egg burritos) for supper! I will share those recipes on my "What's Cooking Wednesdays?" post for this week!

Menu Plan Monday~ My Stretching the Dollar Menu For This Week!

Time to plan the menu again! Sometimes I think it would be better if I posted the menu plan, then post what I actually did, since it changes up! Lol! Oh well!
As usual, I am making large dishes of the food and stretching my dollar and using what I have in my pantry & freezer! I won a Kroger's gift card a while back from "Rant, Rave Roll" and was able to get some roast with it! Cooking one this week and putting the other in the freezer.

I have been tilling in the garden some lately and have it ready to plant I hope! Have to wait for the ground to dry now after all the rain we got on Sat., then I hope to make rows and start planting! Can hardly wait for some fresh veggies!

The "Spring Into Health" event is going great! I got on twitter and that seems to help a lot for spreading the word about giveaways! You can find my list of giveaways on the top of my sidebar, just below the blog event button!

Thurs.= fried ham & some canned, southern style peas & cabbage!
Fri.=leftover ham & veggies
Sat.=leftover homemade pizza
Sun.= tuna sandwiches

Mon.=swiss chicken casserole & rice
Tues.= roast, potatoes & carrots (in the slow cooker)
Wed.=leftover roast
Thurs.=leftover roast

~Menu Plan Monday~ Cooking From The Pantry!

Hello fellow Menu Planners!
Hope your month of April has been going great! I love this time of year! So pretty with all the spring blooms and everything turning green!
The "Spring Into Health Event" has been going good. Still low entries on the giveaways (see sidebar for links!), and I have some more reviews & giveaways to post this week! So, this week, I am using some of the food I am reviewing in my menu! That should be fun! ~Menu Plan Monday~ Restocking & Cooking from the Pantry!

We finally got to go do our big grocery shopping trip the other day! I am sooo happy to have my ingredients restocked in the pantry and fresh foods and a new variety of meat for the freezer!
I was wanting to make lasagna last week, so was very happy to find the mozzarella cheese was on sale! $1.75 for 16 oz. package! Wow! I got several so hope to make some pizza next week, and stuffed jumbo shells one week! Yum! I got the jumbo shells at the Mennonite market, since we went there to get some beans and rice. I highly recommend that everyone stock up on beans and rice! Never know.....
I also was very happy to get my wheat germ and wheat bran and more raisins so I can make my granola! Going to cookout tonight and hope to make BBQ ribs on the grill later this week!

~Menu Plan Monday~ Busy Week Ahead!


I have been working on a huge "Spring Into Health" blog event! This week I am doing some reviews and still gathering up sponsors, products, etc!
The event should start right after Easter (or sooner!) so come join the fun! =) Will be posting the list of sponsors I have this week, I hope! And have the blog event button ready!
We took off homeschool last week, but have to get back to it today!
Also hope to help husband with some of his projects, get ready for Easter, start some seeds in trays for the garden, and I hope to do as much on here as I can without it interrupting family life!
We have been eating some new cereals and yogurt for breakfast and loving it, so that is mostly on the menu for breakfast this week! Also hope to use my yogurt maker again this week to make more!!

~Menu Plan Monday~ Whole Lotta Baking & Pita bread!

I am so happy that I was blessed to do a lot of baking last week! I made pita bread, banana bread, french bread, brownies, and yesterday I made two double batches of pita bread (which made 24 pitas), and a Anniversary cake for us! Hope to do more baking thru the week! Maybe more french bread?!
Here is my pita bread from yesterday!
I would love to hear if anyone makes their own yogurt, how do you like to sweeten and flavor it? I made may first batch of yogurt yesterday and look forward to experimenting more! I will be posting my review on the Yolife this week too!
And does anyone make breakfast cereal? Would love to see your recipes!

~Menu Plan Monday~ Craving Fresh Vegetables! *Sigh*!

If you have been following my blog for long, you know we eat mainly out of our pantry and homecanned foods! I enjoy doing this and it saves us a ton of money and trips to the store!=)
But, I miss fresh fruits and veggies! I have really been craving salad so we got stuff for tacos last week! YUM! Have some lettuce and tomato left to eat this week too!
We also got some bananas and strawberries! What a treat!
What I am really looking forward to is starting the garden and fresh greens from the garden!!!! Hope to start some seeds this week if the weather will let me!
Plan on doing a lot of baking in my wood cook stove! Want to make french bread, pita bread, banana bread, etc! May even make some brownies! I have been trying to cut back on sweets lately though. I found I can go thru a day without chocolate! Lol!

~Menu Plan Monday~ Please Share your Yogurt and Pita Bread recipes!

I love menu planning! This makes my ninth menu since I started linky up with Organize Junkie! having the menu helps me plan my days better, get stuff made and done ahead of time and I am not stuck 30 min. before a meal wondering what to fix!
I am sooo looking forward to fresh veggies and salads! Hope to get some seeds going soon in my planter pots! Figuring we may have some late frost and a lot of rain this spring, but need to get the soil ready (compost, etc.) and some cold weather foods started!

I would love to hear from others who make their own yogurt and pita bread! I have a Yolife yogurt maker now and want to try some pita bread for sandwiches too! So if anyone makes pita bread and yogurt, hope you will share your tips and recipes or links! Thanks sooo much!

Last week husband decided he wanted some chili, so chili replaced the soup last week and we are having soup this week! We did not go to the grocery store, so did not make tacos.=( Hope to do that this week!
Made muffins and rolls last week in the wood cook stove! So thankful I have an oven now! And have a lot of rolls put back in the freezer! The muffins were good and I need to make more! I forget what a great breakfast and snack or dessert they make! =)

Here is my menu for this week!

Monday:
breakfast= biscuits and eggs
Lunch= leftovers (a mashed potato casserole)
Supper= beans and cornbread

Tuesday:
breakfast= muffins and cold cereal
Lunch= leftovers beans and cornbread
Supper= soup (homecanned pork and veggies)

Wednesday:
breakfast= muffins and fruit
Lunch= soup (homecanned pork and veggies)
Supper= cabbage, pork and rice

Thursday:
breakfast= cold cereal and fruit
Lunch= more soup(!)
Supper= salmon patties

Friday:
breakfast= yogurt (hopefully)
Lunch= leftovers (salmon patties)
Supper= Soup (again! Can you tell my bunch loves it? and I am so glad they do!)

Saturday:
breakfast= pancakes and sausage
Lunch= tacos
Supper= marinated chicken, w/rice and veggies

Sunday:
breakfast= leftover pancakes and fruit
Lunch=(leftovers) marinated chicken, rice and veggies
Supper= tacos

~Menu Plan Monday~ Cooking On A Wood Cook Stove!


Well, last weeks breakfast was mostly cereal, but I am trying to be more creative this week!....Okay, not very "creative", but hey! It's something! With homeschooling, I prefer something quick for breakfast! But I am also trying to get up early in the mornings too.
We finally got our wood cook stove last week!! I am so glad I have an oven again!!! I hope to make some muffins on Wed. and Sun. and maybe even make rolls on Thur! So, all of my baking will be done in the wood cook stove and most of my cooking will be done on it too! It really saves us money on the electric, between the cooking and heating! I just love it! Being from the south, when it is 60 degrees, I am cold! So I enjoy the heat and splitting the firewood is a good work-out!
After my family moved to this area (in '97) we lived without electricity, (my family still does, though they have some solar now). So cooking on a wood stove is nothing new to me. I actually prefer food cooked on a wood stove and it is great for canning!
I have posted some photos of our new Kitchen Queen stove below my menu plan today!

Here is our new stove! She's a beauty!

The wood box in it is Huge! Yippee! That means you can burn bigger would (less wood splitting) and it will hold a fire for a Long time!

Here is the oven! It is pretty big for a wood cook stove oven too! My big cookie sheets fit in it!

There are two, big water reservoirs on the back and it came with a bunch of pipe pieces and things to hook them up, so if or when we need to use them, there they are!

~Menu Plan Monday~ Week 7!



I am not creative with breakfast, so I have left it off the post this week! It will probably be mostly cereal though! (If anyone has some breakfast recipes to share, please do!)=)
I need to restock on some groceries finally this week! And have a birthday this weekend so have some special meals planned for that and have to buy some special food! =)
I also hope to get our woodcook stove in this week, (it would be good to get the electric oven fixed too), so that I can bake a cake!
I think I will do a cake mix devils food cake with homemade German chocolate icing! Love 'em!!

We are getting more snow here in the south today! It is so pretty!
Made donuts for a treat today and had our leftover Valentine meal for lunch today! Yum! And very stuffed now! =) Hope everyone one had a great Valentines and is staying warm and safe!

We had some company last week, so made a lot of pinto beans and had a lot of burritos! Yum! I did not get around to the chicken and dumplings or corn casserole, so trying the casserole today! And I am planning on doing BBQ this week instead of dumplings!
Last night for supper we had leftover steak, scrambled eggs and toast! It was sooo Good!
I hope to make some goodies for Valentines day, but have not decided exactly what yet.....I do have a big meal planned for that day though!

Mon.
breakfast= oatmeal and raisins
lunch= corn casserole
supper= salmon patties & pinto beans

Tues.
breakfast= corn casserole
lunch=left overs
supper= BBQ chicken, mac 'n cheese, and purple hull peas

Wed.
breakfast= cold cereal
lunch= Southern Sloppy Joe's
supper= leftover BBQ, mac'n cheese & peas

Thurs.
breakfast= oatmeal
lunch= vegetable soup
supper= Sloppy Joe's and home style french fries

Fri.
breakfast= cold cereal
lunch= leftover soup
supper= sauerkraut and sausage

Sat.
breakfast= omelets
lunch= leftover soup
supper= sauerkraut and sausage

Sun.
breakfast= cereal
lunch= leftover soup
supper= ham, heart shaped cheese scones, and green bean casserole

~Menu Plan Monday~ Warm Meals From The Pantry!

There are already over 300 menu plans linked up at Organize Junkie this morning! Wow! Hope to check some of them out and find some new ideas and recipes and maybe blogs to follow! =)

Hope everyone is having a lovely February 1st! We still have snow on the ground from Friday (29th)! We have had a lot of fun in the snow (hope to post more and pictures on that later!)!


Here is my menu for this week:
Mon.
breakfast=oatmeal
lunch= grill cheese sandwiches
supper= vegetable & beef soup

Tues.
breakfast= pancakes
lunch=pork & rice and corn casserole
supper= leftover soup

Wed.
breakfast= pancakes
lunch= pork & rice and corn casserole
supper= pinto beans

Thurs.
breakfast= cold cereal
lunch=salmon patties
supper= pinto beans

Fri.
breakfast=egg burrito
lunch= leftover "buffet"!
supper= pinto beans

Sat.
breakfast= oatmeal
lunch= bean burritos
supper= steak and baked potatoes

Sun.
breakfast= cold cereal
lunch= chicken and dumplings
supper= Corn casserole (from Jess's "What's Cooking Wednesday", last week) I hope to have leftovers for breakfast or lunch on Monday, next week!

With the cold weather, I have been trying to cook heavy, warm meals! A friend mentioned she has been cooking a lot of casseroles, soups/stews, etc. I hope to check out her recipes and see if I can use some of them! Since I mostly cook from the pantry, I just use whatever we have!
I am out of rolls in the freezer, so need to make a Large batch of rolls this week! That should be fun, since the only oven I have is the small, wood, cook stove!

~Menu Plan Monday~ Using What You Have


Well, once again my menus have overlapped because of an abundance of leftovers! =) I am I the only mom who uses leftovers like three of four times? I just tend to cook a huge pot of soup or beans or whatever and it just seems to last a long time with our small family! Oh well! It sure cuts our grocery bill down! I have not been to the grocery store since before Christmas! And when husband goes it is just to get eggs, milk, bread, butter, cheese and Maybe a couple of other things!
We try to keep a lot of food stocked up all the time though. We have home canned meat and veggies that we canned last year! And we stay stocked up on other canned foods and beans and rice! =) I love having a full pantry and cannot imagine having to go to the grocery store every week to restock!
Here is my "tentative" menu for this week! chances are there will be a lot of leftovers though!

Mon.
breakfast= oatmeal
lunch = chicken and rice and sauteed mushrooms
supper= pinto beans
Tues.
breakfast= scrambled eggs, sausage & toast
lunch = leftover chicken & rice
supper= pinto beans
Wed.
breakfast= sausage & cheese omelets
lunch = spaghetti
supper= white beans
Thurs.
breakfast= cold cereal (if we have milk! if not oatmeal)
lunch = spaghetti
supper= white beans
Fri.
breakfast= pancakes
lunch= beef & veggie soup (from home canned food)
supper= white beans
Sat.
breakfast= pancakes
lunch= grill cheese sandwiches
supper= leftover beef & veggie soup
Sun.
breakfast= oatmeal or cold cereal

My 2nd Menu Plan Monday!


I just loved having a menu plan last week! I think it really helped me out a lot! I was not having to figure out in my head what we could have that day or the next! We even had more leftovers over the week, so we ate those up over the weekend. So, I did not follow my plan to a T, but it just worked out so well! I look forward to it this week and the weeks ahead! I did not get to visit very many of the other great blogs that linked up at Organizing Junkie last week, so I hope I have more time to do it this week! If you are linked up to Organizing Junkie, leave me a comment and I will try to visit your menu plan this week!

Here is the plan I hope to work with this week!

Mon.
breakfast=cold cereal
dinner = turkey sandwiches
supper= chili

Tues.
breakfast= oatmeal and raisins
dinner = potato soup
supper= leftover chili

Wed.
breakfast= pancakes
dinner = leftover potato soup
supper= chili dogs

Thurs.
breakfast= pancakes
dinner = spaghetti (made with spaghetti squash)
supper= pinto beans

Fri.
breakfast= eggs and toast
dinner= spaghetti (made with spaghetti squash)
supper= pinto beans

Sat.
breakfast=cold cereal or oatmeal
dinner= we may go to a friends party! If not, then probably chicken and rice
supper= pinto beans (topped with sour cream, salsa & cheese!)

Sun.
breakfast= omelets
dinner= chicken and rice
supper= white beans and cornbread

My First "Menu Plan Monday!


I am not sure what my main reason for joining Menu Plan Mondays is Yet! But I am hoping to learn how to plan better, try out some new recipes and how I can feed my family better meals!
Anyways, I am sure people can tell from my menu plan this week that I am still a young momma with little children, and still learning as I go! =) But here goes!

Mon.
breakfast= oatmeal with raisins
dinner = leftover chicken and dumplings
supper= pinto beans and rolls or cornbread

Tues.
breakfast=pancakes
dinner = grill cheese sandwiches
supper= leftover pinto beans

Wed.
breakfast= cold cereal (granola)
dinner = vegetable and beef soup
supper= white beans and cornbread

Thurs.
breakfast= eggs and toast
dinner = leftover soup
supper= greens w/ leftover white beans and cornbread

Fri.
breakfast= cold cereal
dinner= leftover soup and grill cheese sandwiches
supper= salmon w/ leftover white beans

Sat.
breakfast= oatmeal and raisins
dinner= pork and rice
supper= chili dogs

Sun.
breakfast= cold cereal
dinner= leftover pork and rice
supper= leftover chili

For my beef/vegetable soup, I am using my home canned meat and veggies!
I have homemade rolls in the freezer to add to meals.
And I hope to make some granola for breakfast cereal!
I love making everything from scratch. I plan to make the chili on Sat. And I always soak my beans the night before I cook a new pot! As you can tell we eat a lot of beans in the winter. Husband is a beans, meat and potatoes man! =)

Any hints, recipes to share, etc. would be fun to hear!
