6 Snack Mix Recipes!!

I was looking for some snack mix recipe and found some great ones, so decided to share them here. Hope you enjoy! If you have any good snack mix recipes, leave a link in the comments! =)


Kickin' Snack Mix Recipe

Prep: 20 min. Bake: 45 min. + coolingYield: 16 Servings20 45 65 Ingredients 


3 cups Crispix
3 cups Wheat Chex
2 cups cheddar-flavored snack crackers
1 cup pretzel sticks
1 cup almonds
1 cup mixed nuts
1 cup pistachios
1/2 cup butter-flavored popcorn oil
1 envelope ranch salad dressing mix
1 teaspoon dill weed
1 teaspoon garlic powder
1 teaspoon cayenne pepper

Directions
In a large bowl, combine the first seven ingredients. In a small bowl, combine the oil, dressing mix, dill, garlic powder and cayenne. Drizzle over cereal mixture; toss to coat.
Transfer to two greased 15-in. x 10-in. x 1-in. baking pans. Bake at 250° for 45-55 minutes, stirring every 15 minutes. Cool on wire racks.
Store in an airtight container. Yield: 3 quarts.



Nacho Snack Mix Recipe

Prep: 10 min. Bake: 2 hours + coolingYield: 16 Servings10 120 130
 
Ingredients

4 cups Crispix
1 can (4-1/2 ounces) crisp cheese ball snacks
3 cups corn chips
2 cups pretzel sticks
1 cup cheese-flavored snack crackers
2 tablespoons taco seasoning
1/2 cup vegetable oil
1/2 cup butter, melted

Directions
In a bowl, combine the first five ingredients. Spread in two ungreased 15-in. x 10-in. x 1-in. baking pans. Combine the taco seasoning, oil and butter; pour over cereal mixture and toss to coat.
Bake at 200° for 2 hours, stirring every 30 minutes. Cool. Store in airtight containers. Yield: 4 quarts.

Trail Mix Recipe

Prep/Total Time: 10 min.Yield: 8 Servings10 10 Ingredients 


1/2 cup unblanched whole almonds
1/2 cup coarsely chopped walnuts
1/2 cup golden raisins
1/2 cup chopped dates
1/2 cup dried apple slices, chopped
1/2 cup dried apricots, chopped
1/2 cup semisweet chocolate chips
1/2 cup Honey Nut Cheerios

Directions
In a large bowl, combine all ingredients. Store in an airtight container. Yield: 4 cups.


 

I am thinking this recipe may be good with my homemade granola, instead of the oatmeal squares cereal.

Cherry Almond Snack Mix Recipe

Prep: 10 min. Cook: 20 min.Yield: 20 Servings10 20 30 Ingredients


4 cups oatmeal squares cereal
1/2 cup sliced almonds
2 tablespoons butter, melted
1/2 teaspoons apple pie spice
1 pinch salt
1 cup dried cherries or golden raisins

Directions
Preheat the oven to 300°F.
In 15-inch x 10-inch x 1-inch baking pan, combine cereal and almonds.
In small bowl, mix melted butter, apple pie spice, and salt . Drizzle cereal mixture. Toss to evenly coat.
Bake 20 minutes or until almonds are toasted, stirring once during baking.
Cool in pan on a wire rack for 20 minutes. Add dried cherries and/or golden raisins.
Cool completely. Store in tightly covered container at room temperature for up to 1 week.



Corny Snack Mix

Prep/Total Time: 25 min.Yield: 40 Servings10 15 25 Ingredients


3 quarts popped popcorn
1 package (15 ounces) Corn Pops
1 package (15 ounces) corn chips
2 packages (10 to 12 ounces each) vanilla or white chips

Directions
In several large bowls, combine the popcorn, Corn Pops and corn chips.
In a large saucepan over medium-low heat, melt chips; stir until smooth. Pour over popcorn mixture and toss to coat.

•Spread onto two 15-in. x 10-in. x 1-in. baking pans. Cool. Store in airtight containers. Yield: 7-1/2 quarts.




Zesty Snack Mix Recipe

Prep: 10 min. Bake: 25 min. + coolingYield: 13 Servings10 25 35 Ingredients


4 cups Corn Chex
4 cups corn chips
1 cup salted peanuts
1 cup quick-cooking oats
1/3 cup butter, melted
3 tablespoons honey
4 teaspoons chili powder
1 teaspoon onion salt
1 teaspoon dried oregano

Directions
In a large bowl, combine the cereal, corn chips, peanuts and oats. Combine butter and honey; drizzle over cereal mixture. Sprinkle with chili powder, salt and oregano; toss to coat.
Spread in a single layer in an ungreased 15-in. x 10-in. x 1-in. baking pan. Bake at 350° for 20-25 minutes, stirring once. Cool. Store in an airtight container. Yield: about 10 cups.

Creamy Sourdough Snack Recipe

I love dips and bread and the hollowed out round loaves filled with rich creamy dip are just amazing! =)

I think this one may go good with the sourdough bread recipe that I just posted in my last blog post. ;)

Creamy Sourdough Snack Recipe from Taste of Home


Prep/Total Time: 20 min.Yield: 28 Servings20 20 Ingredients


1-1/2 cups (12 ounces) sour cream
2 packages (3 ounces each) cream cheese, softened
1/2 cup chopped green onions
1 teaspoon Worcestershire sauce
2 cups (8 ounces) shredded sharp cheddar cheese
1-1/2 cups cubed fully cooked ham
1 round loaf (1 pound) sourdough bread
Chopped fresh parsley, optional

Directions
In a saucepan, combine sour cream, cream cheese, onions and Worcestershire sauce; cook and stir over low heat until blended. Add cheese and ham; cook and stir until cheese is melted and ham is heated through. Cut off top of loaf; carefully hollow out top and bottom, leaving a 1/2-in. shell. Cut bread into cubes. Pour dip into shell; sprinkle with parsley if desired. Serve with bread cubes. Yield: 3-1/2 cups.

Looking for an sourdough recipe that you don't have to keep working with? I found this great recipe on Taste of Home and can hardly wait to try it!


Sourdough Bread Recipe


32 ServingsPrep: 20 min. + standing Bake: 45 min. + cooling


Ingredients
1 package (1/4 ounce) active dry yeast
3-1/2 cups warm water (110° to 115°), divided
7 to 8 cups all-purpose flour, divided
1/4 cup nonfat dry milk powder
2 tablespoons butter, melted
2 tablespoons sugar
2 teaspoons salt
Cornmeal

Directions
In a 4-qt. non-metallic bowl, dissolve yeast in 2 cups warm water;
let stand for 5 minutes. Stir in 2 cups of flour until smooth.
Cover loosely with a clean towel. Let stand in a warm place
(80°-90°) to ferment for 48 hours; stir several times daily.
(The mixture will become bubbly and rise, have a "yeasty" sour aroma
and a transparent yellow liquid will form on the top.) Stir in milk
powder, butter, sugar, salt, remaining water and enough remaining
flour to form a soft dough. (Do not knead.) Cover and let rise in a
warm place until doubled, about 1-1/2 hours.

Turn onto a floured surface; punch dough down. (Do not knead).
Divide in half. Shape each into a round loaf. Heavily grease baking
sheets and sprinkle with cornmeal. Place dough on prepared pans.

Cover and let rise until doubled, about 30 minutes.

With a sharp knife, make three diagonal slashes across tops of loaves. Bake at 350° for 10 minutes. Brush loaves with cold water; bake 35-40 minutes longer or until golden brown. Yield: 2
loaves.


Editor’s Note: Dough may also be shaped into 24 rolls instead of loaves. Bake for 10 minutes, then 20-25 minutes after brushing with water.

Princess S.'s Birthday Party 2011!


Last month was our oldest Princess birthday! yay!
I made her a Sand castle cake! She and all the children loved it!
Here is the LINK for the recipe I used. It was very easy to make.


My sister came and helped decorate for a Luau party. =) She found some of the cutest decorations and party supplies at Dollar tree.


I made a watermelon bowel and filled it with fruit for the kids.
She wanted pizza, so I made pizza for everyone.



I bought her a coconut! She had never had one before and thought it was so neat! She loved it, but not the milk in it! lol!

She also got the One thing she had been asking for, for I don't know how long! A train set! I found one on Amazon for a good deal, and Daddy liked it because it came with a bucket that it All fits into!

I can hardly wait for the youngest Princess to have her birthday! I have to decide on a cake and everything for it still. =)
I also want to start getting ready for the Holidays. =)

Easter 2011


We celebrated Easter at home this year, with just our family! Usually we go to my sister's and have a big hunt and lunch, but this year they had other things going on, so we just stayed home. We had a really good time and got to lay around and watch movies all after noon! lol!

Easter morning, I made a cheese spread bunny (pictured above and below). It was very yummy!

And the girls got to hunt Easter eggs of course! I had some candy for the eggs, but had not gotten to a store to get some fun crackers to fill the eggs, so I made notes for them saying they could pick out some fun things at the store! =)
Thankfully they are very easy to please when it comes to gifts, and they loved it all!
I look forward to next Easter! I wonder if there will even be Easter stuff for sell next year? These are interesting and kind-of scary times we live in....

My Birthday Chessecake Recipe!

I am finally getting around to posting the chessecake recipe I used to make my birthday cake! It was absilutly wonderful, or is it sinful? Anyways! I Loved it and ended up eating almost every bite of it by myself! =) (Thank you little brother, Arthur, for helping me eat some of it!) =)
My husband just does not eat many sweets and girls had plenty of Christmas goodies!

So, here is the recipe:

Taste Of Home's Chocolate Cookie Cheesecake !

12 ServingsPrep: 30 min.
Bake: 50 min. + chilling

Ingredients
1-1/2 cups cream-filled chocolate sandwich cookie crumbs (about 16 cookies)
3 tablespoons butter, melted
4 packages (8 ounces each) cream cheese, softened
1 cup sugar
1-1/2 cups semisweet chocolate chips, melted and cooled
3 teaspoons vanilla extract
4 eggs, lightly beaten
20 chocolate cream-filled chocolate sandwich cookies, coarsely chopped
Directions
In a small bowl, combine cookie crumbs and butter. Press onto the bottom of greased 9-in. springform pan. Refrigerate while preparing filling.
In a large bowl, beat cream cheese and sugar until smooth. Beat in chocolate and vanilla. Add eggs; beat on low speed just until combined. Fold in half of chopped cookies. Pour over crust. Sprinkle with remaining cookies. Place pan on a baking sheet.
Bake at 325° for 50-60 minutes or until center is almost set and top appears dull. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Yield: 12 servings

I do not own a springfoam pan, so I used a round cake pan. I baked it in my woodcook stove! Yay!

It was fun (and yummy) to make, and pretty easy!

"Stocking Up" Challenge Step 1

Hey ladies!


I am so excited to see that ya'll are interested and want to do this! Good for you!


I am not going to rush this challenge! I have no "day to finish" and have not planned on having one! I want to get you started and then you can grow from there!

Also for anyone who is on a tight budget, you may need 5 or 6 weeks to stock up on things that some one else can get in two or three weeks. So even if I lay it out to say so many weeks, you make your own plan on paper, and STICK TO IT AS BEST YOU CAN!

Okay, the FIRST STEP:

I want you to save every penny that you can for the next week!

Save your eating out money.

Stay home as much as you can. When you go out, you spend money!

Roll your change that you have around the house.

Get your spouse and your family involved! Tell them your plan and see if they can pitch in to help save money!

Spend as little as you can, and please save up!

Your stocking up money is the most important money for your families future! They can cut back on a trip to the movies, going out to eat, and just shopping around for "things"! Give it a try! I think you will be amazed at how much you can stock up on and things you can get that you couldn't before. And most of all, when you are done stocking up, you will feel so good about yourself and what you have done for your family! It will give you peace!

Also,

Get the local grocery store papers and find out what is on sell for next week.

And Collect some coupons if you want.

Well there you go! Short and simple! For the next week, SAVE MONEY!

I wish I could give you more then a week, but as I said, this is just to get you going! After this challenge, and during, I hope you continue on your own, to save and spend WISELY!

Canning Pear Butter Autumn 2010

Back in Sep. (2010), some friends brought us two five gallon buckets of pears from their trees!! Yay!
I decided to try making pear butter to can, instead of canning sliced pears!

Here are my notes on how I made the pear butter and some pictures for you!

After peeling and slicing the pears, I put them in my Ninja food processor (pictured above) and pureed them.
From the two five gallon buckets of pears, I pureed and measured up 14 qts. of pears into my large pot (pictured above).
I added 14 cups of brown sugar and about 3/4 cup of lemon juice, 2 TBSP. of nutmeg and 2 TBSP. of cinnamon. I cooked and stirred this for about an hour and a half (until it was heated all the way thru and bubbling!). Then I measured into jars and processed about 20 minutes for quart jars and 10 minutes for pints, in boiling water canner.

The pear butter taste SOOO yummy! I am a Huge fan of apple butter so I was delighted to make a bunch of pear butter!

The only thing I would do different is put less nutmeg and more cinnamon! Maybe 1 tablespoon of nutmeg and 3 tablespoons of cinnamon! =)

I hope I am able to can more apples and pears or apple & pear butter this year!

Special Sep. Birthday Cakes!

My sister has two children who have birthdays the first of Sep. (birthdays are one day apart!)! And the girls and I got to go over to their house for the double Birthday party on Sat., Sep. 4th! It was so much fun!
We got to help decorate, wrap presents, clean and set up the activities before the party! And my brother showed up from TX. to visit for the weekend and that was a BIG surprise!

I took pictures of the cakes that my sister's sister-in-law made for the kids birthdays! She did an amazing job on them!
The first was for my nephew, who turned 5! He loves horses!


The second is the princess cake for my niece!



I also helped make the special 1st Birthday cake that they gave to my niece for her to eat on her own!


I love birthdays and birthday cakes! I love how each one is so special and unique! I hope someday I can get me a bunch of cake decorating things and do more to make fun cakes! =)

CSN Stores Review Is............A Hamilton Beach...........(Read post!)

I know it has been a long while since I told you about the "Le creuset" cookware at CSN Stores and that I was going to do a product review with CSN Stores! Well, I am finally able to get my sick computer to run long enough for me to post my review! Yippee!

If you follow my blog, you know that I love CSN Stores! With over 200 stores to shop from, you can find just about Everything for your family, home, yard, gifts, etc! I love the Cookware.com store! So when i was offered a review for CSN Stores, that is where I headed!

What caught my eye this time?

A Hamilton Beach Convection Counter top Oven!!!!!!!!!!!

Husband and I had talked about getting a toaster oven. Our microwave had broke a while back and I was having to use the electric stove oven to warm things up! Ugh! Husband didn't want to get a new microwave at the time and I am not crazy about microwaves anyway, so it was a great choice for our family!

I was very excited when the oven came and I could start using it!

First I have to tell you that I give it 5 stars and love it! if you need or want a toaster oven, this Hamilton Beach is the One to get!!!!

My review:

It is very easy to clean! You can wipe it down fast, and the trays & racks slide right out and can be washed in the dish washer! There is a bottom tray that you can slide out and wash off, if you have a spill or just need to clean it out.

Now to how great it cooks!

I have baked and heated up just about everything in my toaster oven!

Here is a list and some pictures to give you an idea of what YOU can bake/cook/heat in this toaster oven, if you get one!!

Baked chicken (seen in picture below)!


A Lot of cornbread! And several apple pies!



Here is another picture of the cornbread and apple pies, and there are two pans of brownies in the oven!

This picture is my favorite so far!!! YUM! The brownies up close in the oven! =)

I have also made my granola in the Hamilton Beach convention oven!
Other things include:
baked steak,
baked potatoes,
baked "blooming" onion,
smoked sausage,
mini pizzas,
& biscuits
to name a few!

And as I said I heat everything in it like a microwave!

Oh, and did I mention toast?
You can fit 6 big slices of toast on each tray! So this little oven can sit on your counter and not take up too much space (a little more square and not as wide as our old microwave), yet it can bake a lot of food at one time!


I highly recommend this pretty convention/toaster oven for your kitchen! And it will make a good gift for mom, grandma, sister, or just about anyone!

Making Noodles Info

I have been interested and getting a noodle maker and start making our own noodles. Sure noodles are cheap, but so is the water, flour & eggs you use to make them!
Plus, you know me, I want to know how to do this stuff, just in case you cannot buy it someday, and so I can teach my children how to do it! =)

My computer is still acting up on me, but I have managed to find some interesting info on making noodles, so thought I would have to post it!

"Noodles consist basically of flour and water.

Ingredients:

•2 cups flour
•1/2 cup water
Egg noodles are made by using two eggs plus enough water to make 1/2 cup instead of the plain water.

A stiff dough is prepared from flour and water. Knead the dough thoroughly, cover with plastic, and allow it to rest for 20 minutes. The resting time allows the flour to absorb water uniformly and makes the dough more pliable and easier to handle. Flatten the dough with a rolling pin and make a sheet 1mm thick (the thickness of a U.S. penny). Dust with flour to prevent sticking, as necessary. Roll the sheet into a log, and cut slices of the width desired for the noodles. A pasta machine, such as the one illustrated here, can be used to roll and cut the dough evenly. When using this type of pasta machine, the dough must not be too wet, otherwise it will stick in the machine. Once you have rolled the sheets, it may be necessary to let them air dry for about 10 minutes to be able to cut them properly. The drying time will vary depending on the humidity of the air and the amount of moisture in the dough. If the dough is too moist, the noodles will tend to clump together. Moja Creations Review & Giveaway!

I think these make a very "showy" way to pack your food! And instead of a pile of plastic lunch boxes, etc. you can toss them in the washer machine and they do not take up much space! Another plus for keeping in the kitchen drawer!

Meet Our Featured Etsy store and Owner!
Here is what the owner of Moja Creations shared with us about her and her store:

What inspired the name of your Etsy store?
- Choosing the name of our Etsy store was so tough at first! You want to pick the 'perfect' name and its so hard to come up with just that. I enlisted the help of a friend after deciding to sell my items on Etsy and we came up with fun sounding words and Moja just sounded motivating and upbeat. When we realized those 4 letters were our first and middle initials put together we decided it was the perfect idea!

What inspired you to open your Etsy store?
- I always said I wanted to start a business so after finishing college I had a year off before beginning medical school and thought that was my opportunity! From the start I wanted to create items that were useful but ecofriendly at the same time since so much effort is being placed on saving our planet. Having worked with children for quite some time I thought of the snack bags and just knew that was it! Everyone thought I was a bit crazy but within days we were selling like crazy!

Would you like to share a little bit about yourself?
- I am a 24 year old from Florida, currently a 2nd year medical school student working my way to becoming a Pediatrician/Neonatologist, which I now know is a TON of work! Outside of studying I love spending my time working with my fiancee on all the items for our Etsy store and using my creative side to come up with fun new projects to work on!

Anything else you would like to share with us?
- I just want to thank everyone who is doing their part in making our planet a better place to live! There are so many ways to make small changes these days from buying a reusable water bottle to recycling newspapers that it's hard not to join in. We are so happy to play a part by offering our ecofriendly items in all our fun fabrics :-)
